Irrigation is vital in the oases. In an elaborate canal system, the precious water is distributed to the fields, which are privately owned by the families. But the canal system, on the other hand, belongs to the village community. The water utilization rights are meticulously regulated and managed by a specially nominated 'water master'. Generally, a multi-level cultivation method is used. The date tree as the tallest tree shadows the fruit trees below, and these in turn shadow the cultures on the ground, mostly vegetables and cereals. In the life of a farmer, everything is about the date palm. Because of the tree's versatility, it is often referred to as the 'mother and aunt of the oasis inhabitants'. The trees can be harvested for 100 years, but they also need plenty of water to thrive. In addition, the palm tree needs an ambient temperature of 30 to 35 degrees for fructification. Under optimal conditions up to 100 kg of dates can be harvested per tree.
Ohne Bewässerung läuft in den Oasen gar nichts. In einem ausgeklügelten Kanalsystem wird das kostbare Naß auf die Felder verteilt, die sich im Privatbesitz der Familien befinden. Das Kanalsystem dagegen gehört der Dorfgemeinschaft. Die Wassernutzungsrechte sind penibel geregelt und werden von einem eigens ernannten Wassermeister gemanagt. Meist wird Stufenfeldbau praktiziert. Die Dattelpalme als höchster Baum beschattet die darunter liegenden Obstbäume und diese wiederum die Bodenkulturen, meist Gemüse und Getreide. Im Leben des Bauern dreht sich alles um die Dattelpalme. Aufgrund ihrer vielfältigen Nutzbarkeit wird sie gerne als 'Mutter und Tante der Oasenbewohner' bezeichnet. Die Bäume haben eine Nutzzeit von 100 Jahren, benötigen zum Gedeihen jedoch viel Wasser. Zudem braucht die Palme zur Fruchtbildung eine Außentemperatur von 30 bis 35 Grad. Unter optimalen Bedingungen lassen sich dann 100 kg Datteln pro Baum ernten.
