Im letzten und entscheidenden Schritt reift das Destillat bis zu 14 Jahre in Eichenfässern. Dabei ist nicht nur die Holzart, sondern auch die frühere Nutzung des Fasses, die Lage des Lagerhauses, seine Bauart und das Mikroklima von großer Bedeutung für die Güte des Endproduktes. Trotzdem schmeckt der Inhalt jedes Fasses ein klein wenig anders. Daher werden oftmals verschiedene Destillate vermischt, um einen konstanten Geschmack zu erzeugen. Man spricht dann von Blended Whiskey. Ungemischte Sorten aus gemälzter Gerste kommen unter der Bezeichnung 'Malt Whiskey' in den Handel. Allen gemeinsam ist die goldgelbe Farbe, die Bernard Shaw zur Bemerkung veranlasste, Whiskey sei 'aus Flaschen gezogenes Sonnenlicht'.
In the final and decisive step, the distillate matures in oak barrels for up to 14 years. Noot only the type of wood is of great importance for the quality of the final product, but also the earlier use of the barrel, the location of the warehouse, its design and the microclimate. Nevertheless, the content of each barrel tastes a little bit different. Therefore, various distillates are often mixed to produce a constant taste. This is called Blended Whiskey. Unmixed varieties of malted barley have got the name 'Malt Whiskey' on the market. What they all have in common is the golden yellow color that prompted Bernard Shaw to say whiskey was 'sunlight out of the bottle'.
